The Bosco del Merlo estate winery is the pride and joy of siblings Carlo and Roberto Paladin; it is the result of their continuous and evolving commitment, and an expression of their love and passion for the earth, and its fruits.
The estate produces wine that is typical of the area; bringing together tradition, culture and courage; using the most advanced technology while fully respecting the environment in which they operate, Bosco del Merlo offers quality without compromise, and maximum satisfaction for their customers.
The name “Bosco del Merlo” is derived from local topographical maps which refer to the oak forests that once covered the area. The vineyards of Bosco del Merlo are situated between the ancient Roman consular roads of Via Annia and Via Postumia, dating back to the early centuries after Christ.

A passion for doing things right in Bosco del Merlo translates into particular attention being paid to work in the vineyard, which is carried out with the utmost care and expertise, allowing them to overcome the majority of difficulties and unforeseen circumstances that the season can present, in order to produce grapes of the highest quality every year.
QUALITY IN THE CELLAR
In the cellar, a skillful winemaker brings out the maximum quality potential that the grape possesses at the time of harvesting, through techniques and technology that will further enhance its particular characteristics. In fact, we have already seen that the quality of the wine depends strictly on the quality of the grape. A great wine is only achieved from perfect grapes. It is therefore in the vineyard that we begin to build an excellent wine; in the cellar we work to preserve and accentuate the qualities and typicity that the grape possesses.

In the Vineyard
Valdobbiadene Prosecco Superiore DOCG Brut Bosco del Merlo is produced exclusively from Glera grapes, which on reaching the correct maturity, are harvested during the first hours of the day in order to guarantee the preservation of the grape’s aromatic characteristics.
In the Cellar
Valdobbiadene Prosecco Superiore DOCG Brut Bosco del Merlo is produced through fermentation of skins with soft pressing and pureness at a controlled temperature. The “prise de mousse” and the fermentation take place in steel tanks for about 40 days at 13° – 14° C, with the preservation of the noble wine bubble.
Produced in the original area of production, now listed in as a UNESCO heritage site.
Tasting Notes
This wine is characterized by a straw yellow colour with pale green highlights, and a brilliant and creamy foam. Its perlage is fine, noble and persistent. The scent is fruity, clean with crunchy apple, peach, floral rose and acacia nuances. Tart and fresh on the palate, with a savoury and dry aftertaste.
Pairings
Perfect as an apéritif, a must-have wine for convivial occasions. Pair with first courses, such as potato ravioli stuffed with Casatella Trevigiana cheese and asparagus, or fish dishes such as anglerfish baked with cherry tomatoes and taggiasca olives.
