LA CHABLISIENNE
Known as one of wine’s most underestimated treasures, Chablis is said to be one of the purest expressions of Chardonnay in the world. With vines planted on Kimmeridge clay, it is the soil that gives Chablis wines their extraordinary high-acid, mineral characteristics. Founded in 1923, La Chablisienne produces an extensive and renowned line-up of Chablis wines. Accounting for about 25% of the region’s vineyard acreage, the stalwart producer is not just famous for the vast volume of wine it produces, but also for consistently setting new benchmarks for quality and style. By producing wines in small lots with meticulous care, La Chablisienne carries out production in a way much more typical of smaller, artisan producers.

2014 CHABLIS LE FINAGE
The 2014 Le Finage is an excellent “village” wine made from variously facing slopes in the villages of: Beines, Béru, Chablis, La Chapelle-Vaupelteigne, Chemilly-sur-Serein, Chichée, Collan, Courgis, Fleys, Fontenay, Lignorelles, Ligny-le-Châtel, Maligny, Poilly, Préhy, Saint-Cyr-les-Colons, Viviers, and Villy.
A complex, well-developed bouquet reveals white and yellow-fleshed fruits. A distinguishable mineral note emerges upon aeration. Good aromatic length. Lovely body and mouthfeel accompanied by fresh, crisp, well-defined fruit. The ripe fruit on the nose is elegantly echoed in the mouth. The persistent finish will find you continuing to return to the bottle for more.

WITH FOOD
Chablis like La Chablisienne Le Finage do well with lighter proteins like chicken, trout, bass, and halibut. Chablis’ natural acidity beautifully complements simpler creamy sauces. (See the first recipe below: Poulet à la Moutarde—ç’est très magnifique!) Also because of its acidity and salinity, Chablis is easily at home alongside seafood, shellfish, and raw fish.
